The increasing annual production of food waste, especially waste from the processing of vegetables such as potatoes, has raised environmental and economic concerns Potatoes, as one of the most widely consumed agricultural products in the world, produce a significant amount of waste, including peel, tuber remains, and starchy waste, during processing in the chip making, slicing, and starch extraction industries These wastes are rich in starch 40 65% , fermentable sugars, protein, minerals, and antioxidant compounds such as chlorogenic acid and have the potential to be reused in the cultivation of microorganisms The edible mushroom Pleurotus ostreatus oyster mushroom is of great importance in the food and pharmaceutical industries due to its high ability to decompose lignin and cellulose, growth on diverse organic sources, high nutritional value 25 35% protein , and the presence of bioactive compounds such as beta glucans, immunogenic polysaccharides, and antioxidants Appropriate culture medium plays a decisive role in increasing the biological performance and quality of mushroom compounds The use of potato waste can be a cheap carbon source, a suitable alternative to expensive commercial sources such as glucose A review of recent studies shows that adding potato waste extract or hydrolysate to the Pleurotus ostreatus culture medium increases growth rate, improves mycelium formation, increases biomass, increases biological yield BE of the product, and improves the concentration of protein, essential amino acids, and bioactive polysaccharides The presence of starch and free sugars increases the rate of primary metabolism of the fungus and stimulates biosynthetic pathways Antioxidant compounds in potato waste also reduce oxidative stress and increase cell bioavailability This article provides a comprehensive review of the chemical composition of potato waste, technologies for extracting nutrients from it, and the effect of using these wastes on the growth, nutritional composition, and biological performance of Pleurotus ostreatus The results indicate that potato wastes are not only an efficient nutrient source for mushroom cultivation but also a sustainable solution for reducing environmental pollution and promoting a circular economy in the food industry
